Throughout the three months in French oak barrels, the Sauvignon Blanc underwent partial malolactic fermentation and extracted delicate rose petal, stonefruit and citrus aromas to develop into the striking Fumé Blanc.
“The palate shows great persistence, a silken texture, lemony flavours and fresh acidity”, says Louise Horsley manager of Bluemetal Vineyard. “It will match perfectly with soft cheeses”.
